(8 items)- [ ]2 cans (15 oz each), rinsed and drained Canned black beans
- [ ]2 cups Cooked white or brown rice
- [ ]1 cup Jarred salsa or canned diced tomatoes
- [ ]1 tsp Ground cumin
- [ ]1/2 tsp Garlic powder or 2 minced cloves
- [ ]1 cup Shredded cheddar or pepper jack cheese
- [ ]1 tbsp Olive oil
- [ ]To taste Salt and pepper
Substitutions:
- • Black beans → Pinto beans or red kidney beans
- • Cheddar cheese → Vegan cheese or diced avocado
Instructions

Heat olive oil in a large skillet over medium heat.

Add rinsed black beans, cooked rice, salsa, cumin, and garlic powder. Stir well to combine.

Cook for 5 to 7 minutes, stirring occasionally, until the mixture is hot and bubbling.
- 4.
Season with salt and pepper to taste.

Spread mixture evenly, top with shredded cheese, cover with a lid for 3 minutes until cheese is completely melted and bubbly.
- 6.
Serve warm with tortilla chips or spoon into warm tortillas.
