A slight gray color on the interior of ground beef is often normal oxidation due to lack of oxygen exposure (myoglobin turns grayish-brown). If the meat smells fresh and is not slimy, it is completely safe.
80/20 (80% lean, 20% fat) provides the juiciest burgers and seared dishes. 85/15 or 90/10 is ideal for meat sauces and casseroles where you don’t want excessive rendered fat.
