- [ ]5 cloves, smashed Garlic cloves
- [ ]1 lemon, juiced and halved Fresh lemon
- [ ]1 tsp Dried oregano or rosemary
- [ ]1 tbsp Olive oil
- [ ]1/3 cup Chicken broth or white wine

Instructions

Season chicken thighs generously on all sides with salt, pepper, and dried oregano.

Heat olive oil in a heavy 12-inch skillet over medium-high heat. Place chicken skin-side down (or smooth side down) in the skillet.

Sear undisturbed for 8 minutes until deeply golden. Flip and cook boneless thighs for another 6–7 minutes; bone-in thighs need about 12–15 minutes more over medium heat. Cook until the thickest piece reads at least 165°F (74°C); many cooks prefer thighs at 175°F (79°C) for a more tender texture.

Add smashed garlic cloves and lemon halves to the pan, letting garlic sizzle for 1 minute.

Pour chicken broth and lemon juice into the pan, swirling to scrape up the browned bits on the bottom. Simmer for 2 minutes until sauce is glossy.
